Whole30 Spring Salad Recipe

This Whole30 Spring Salad Recipe brings together a variety of fruits and vegetables for a bright and fresh meal. This is the kind of salad you want to eat for lunch in the backyard while the sun is shining and the birds are chirping. The fruit brings a wonderful sweet flavor to the mix while the chicken and veggies balance it out.

Ingredients and Instructions

This salad requires very simple ingredients to make. The variety of fruits and vegetables give the salad an amazing flavor, while the pecans add a nice crunch.

For the grilled chicken, I used Trader Joe’s fully cooked, lightly seasoned boneless skinless chicken breasts. These chicken breasts are perfect for making a quick meal. Plus, the ingredients are completely Whole30 compatible. To reheat the chicken, you can use either the stove or the microwave. I used the microwave and reheated the chicken for about 2 minutes. Then I added some sea salt, black pepper, paprika, and garlic powder to give the chicken breast even more flavor.

I love using avocados, always, but there’s something special about having avocados in the spring. Over the winter, I had such a hard time finding avocados that were the right ripeness. It was so frustrating to cut open an avocado that appeared to be ripe to find that it was rotten on the inside. But avocados are back! It’s avocado season, and it’s time to add them to literally. everything.

Any balsamic dressing would be great on this salad. I made a simple olive oil and balsamic vinegar dressing by mixing them together in a small bowl with salt and pepper.   • 2 cups spring mix
  • 2 cups spinach
  • ¼ cup blueberries, rinsed
  • ¼ cup shredded carrots
  • 1 mandarin orange
  • 2 tbsp pecan pieces
  • ½ avocado, sliced
  • 1 grilled chicken breast
  • 2 tbsp Primal Kitchen olive oil
  • 2 tbsp Primal Kitchen balsamic vinegar
  • ½ tsp sea salt
  • ½ tsp black pepper


  • Plate the spring mix, spinach, blueberries, orange, pecan pieces, avocado, and grilled chicken.
  • In a small bowl, mix together olive oil, balsamic vinegar, salt, and pepper. Pour over the salad. Enjoy!
