Ingredients

  • 2 cups spring mix
  • 2 cups spinach
  • ¼ cup blueberries, rinsed
  • ¼ cup shredded carrots
  • 1 mandarin orange
  • 2 tbsp pecan pieces
  • ½ avocado, sliced
  • 1 grilled chicken breast
  • 2 tbsp Primal Kitchen olive oil
  • 2 tbsp Primal Kitchen balsamic vinegar
  • ½ tsp sea salt
  • ½ tsp black pepper

Instructions

  • Plate the spring mix, spinach, blueberries, orange, pecan pieces, avocado, and grilled chicken.
  • In a small bowl, mix together olive oil, balsamic vinegar, salt, and pepper. Pour over the salad. Enjoy!
